Jahrhundert revolutionierte die Dampfmaschine, wie viele andere Industrien auch, die Milchwirtschaft. Es entstanden die ersten Molkereien.W\u00e4hrend des Nationalsozialismus wurden die hygienischen Vorschriften in der Milchwirtschaft versch\u00e4rft. Nur noch pasteurisierte Milch durfte in Umlauf gebracht werden. Gleichzeitig entstand das Berufsbild des Molkereimeisters.<br \/>In den 1930er-Jahren ist die deutsche Milchwirtschaft grundlegend umstrukturiert worden. Aufgrund der sogenannten Agrarkartellierung wurden alle milchviehhaltenden H\u00f6fe dazu gezwungen ihre Milch an eine bestimmte Molkerei innerhalb eines bestimmten Einzugsgebietes abzuliefern. Mit dieser Ma\u00dfnahme sollte in erster Linie eine autarke Versorgung der deutschen Bev\u00f6lkerung mit Fett und Eiwei\u00df im eventuellen Kriegsfall sichergestellt und eine Versorgungskrise wie im 1. Weltkrieg vermieden werden. Die Vermarktung wurde ebenfalls eingeteilt. Arnold und Reinhold Bruhin, die S\u00f6hne des Gr\u00fcnders 1918<\/p><\/div>\n\t\t\t<\/div>\n\t\t\t<\/div>\n\t\t\t\t\n\t\t\t\t\n\t\t\t\t\n\t\t\t\t\n\t\t\t<\/div><div class=\"et_pb_with_border et_d4_element et_pb_row et_pb_row_5  et_pb_css_mix_blend_mode et_block_row\">\n\t\t\t\t<div class=\"et_d4_element et_pb_column_4_4 et_pb_column et_pb_column_5  et_pb_css_mix_blend_mode et-last-child et_block_column\">\n\t\t\t\t\n\t\t\t\t\n\t\t\t\t\n\t\t\t\t\n\t\t\t\t<div class=\"et_pb_module et_d4_element et_pb_text et_pb_text_5  et_pb_text_align_left et_pb_bg_layout_light\">\n\t\t\t\t\n\t\t\t\t\n\t\t\t\t\n\t\t\t\t\n\t\t\t\t<div class=\"et_pb_text_inner\"><p>Die Entstehung der Molkerei Hiddestorf geht bis auf die Zeit um 1900 zur\u00fcck. Ihr Gr\u00fcnder war der Schweizer Josef Bruhin. 1933 kaufte der bekannte Sahneh\u00e4ndler Gustav Hamer aus Hannover die kleine Molkerei in Hiddestorf. Bei \u00dcbernahme der kleinen Molkerei wurde nur Butter und Sahne hergestellt. Die Magermilch ging zu der Zeit als Futtermilch an die Lieferanten zur\u00fcck.<br \/> 1939 brach der 2. Weltkrieg aus. Die hannoversche Molkerei Aktiengesellschaft\u00a0 (MAG) wurde sehr fr\u00fch teilbombardiert. Um die Versorgung der Bev\u00f6lkerung sicher zu stellen, wurden die Genossenschaftsmolkereien Wunstorf, Mellendorf, Burgdorf und die Privatmolkerei Hamer vom Staat auf Frischmilchbetriebe umgestellt. Die verantwortlichen Leiter und Besitzer stimmten nur unter der Bedingung zu, dass sie auch nach Kriegsende weiterhin diese M\u00e4rkte bedienen durften. Diese Zusage sicherte in den Nachkriegsjahren den wirtschaftlichen Erfolg der Molkerei Hamer. Hamer garantierte immer eine h\u00f6here Zahlung pro Fetteinheit und kg an die Lieferanten; dies galt bis zum letzten Tag.<\/p>\n<p>Ab 1950\u00a0 f\u00fchrte August Binnewies zusammen mit Else Hamer das Gesch\u00e4ft. August Binnewies plante bereits im Jahr 1959 einen Teilneubau neben dem Kesselhaus - leider verstarb er 1959 - daraufhin wurde das Bauvorhaben abgesagt.<br \/> Im selben Jahr gab es einen Gro\u00dfbrand in der alten Molkerei, der Dachstuhl brannte aus. Nach dem Brand wurde der Dachstuhl ausgebaut und bot Wohnungen f\u00fcr Mitarbeiter der Molkerei. Jutta Binnewies f\u00fchrte nach dem Tod ihres Mannes die Gesch\u00e4fte weiter.<\/p>\n<p>In den sp\u00e4ten 1960er Jahren setzte in Deutschland eine Entwicklung ein, die weitreichende Konsequenzen f\u00fcr das Molkereiwesen hatte. Die vorhandenen kleinen, h\u00e4ufig schon um die Jahrhundertwende entstandenen Molkereien erwiesen sich zunehmend als zu klein. Diese Situation l\u00f6ste seit Beginn der 60er Jahre einen staatlich gef\u00f6rderten Konzentrationsprozess aus, der zu zahlreichen Betriebs\u00fcbernahmen bzw. Stilllegungen f\u00fchrte.<\/p>\n<p>In den Konditoreien, B\u00e4ckereien und Caf\u00e9s im Ruhrgebiet wurde w\u00e4hrend der Zeit des Wirtschaftswunders viel Sahne verbraucht. Um diese vielen Abnehmer und deren Sahneh\u00e4ndler gab es eine gro\u00dfe Konkurrenz. Sogar aus dem weit entfernten Niedersachsen kamen die Z\u00fcge mit den 40-Liter-Kannen voller Sahne. Neben der schon erw\u00e4hnten Konkurrenz im Ruhrgebiet gab es weitere Gr\u00fcnde f\u00fcr das Zusammengehen. Der Konzentrationsprozess in der Milchwirtschaft nach dem zweiten Weltkrieg zwang die Molkereien, Partner zu suchen. Dies traf besonders auf die Privatmolkereien zu. Auf sich alleine gestellt, hatten die kleineren Betriebe keine Chance, am Markt zu bestehen und mussten so mit Pleite und Schlie\u00dfung oder \u00dcbernahme in der nahen Zukunft rechnen.<\/p>\n<p>Ein Grund f\u00fcr diesen Konzentrationsprozess war auch die Abschaffung des Reichsn\u00e4hrstandgesetzes. Dieses Gesetz kontrollierte bis 1969 die Absatz- und Einzugsgebiete f\u00fcr Milch. Es war noch ein Relikt aus Zeiten der Bewirtschaftung im und nach dem zweiten Weltkrieg. Nach Wegfall dieser festgelegten Absatz- und Einzugsgebiete konnten alle Produkte wieder frei verkauft werden, was gr\u00f6\u00dferen Molkereien einen Vorteil verschaffte. Ebenfalls konnte durch die Fusion das Verh\u00e4ltnis zu den Milchlieferanten, von denen eine Molkerei extrem abh\u00e4ngig war (und ist), weiter verbessert werden. Dies allein dadurch, dass eine gr\u00f6\u00dfere, finanzkr\u00e4ftigere Firma eher in der Lage ist, h\u00f6heres Milchgeld zu zahlen und vor allem zu garantieren. So fiel der Zukauf von Milch von nun an leichter. Die entstehenden Handelsketten forderten Zentralbelieferung. Der permanente Rohstoffmangel Milch war immer existentieller. Gleichzeitig fusionierten Mellendorf, Wunstdorf und Burgdorf und erm\u00f6glichen den Neubau der MAG in Isernhagen.\u00a0 W\u00e4hrend dieser Zeit deckte Hiddestorf die fehlende Milchmenge\u00a0 bei der Genossenschaftsmolkerei in Hameln.<\/p>\n<p>Anfang der 60er Jahre ging das Milchaufkommen im Calenberger Land zur\u00fcck. Gleichzeitig wuchs der Absatz der Molkerei Hiddestorf.\u00a0 Um die Rohstofflage zu sichern, wurde die Molkereigenossenschaft Jeinsen aufgekauft und ein Jahr sp\u00e4ter die Privatmolkerei Gestorf. In Jeinsen wurde noch bis Anfang der 60er Jahre produziert (bis zur Fertigstellung des Neubaus). Gestorf wurde gleich nach der \u00dcbernahme geschlossen.<\/p>\n<p>Die Gesch\u00e4ftsf\u00fchrung f\u00fchrte eine neue Marktstrategie ein, rationalisierte die Distributionswege und erschloss neue M\u00e4rkte. Der Umsatz mit Milchprodukten stieg rasant. Der Preiskampf rief den Genossenschaftsverband auf den Plan. Dieser untersagte der Molkerei Hameln seinen Rohstoff weiterhin an die Molkerei Hiddestorf zu liefern. Die \u201efreie Marktwirtschaft\u201c steckte noch in den \u201eKinderschuhen\u201c in Deutschland. Daraufhin verteuerte sich der Rohstoff f\u00fcr die Molkerei Hiddestorf. Neue Bezugsquelle f\u00fcr den Rohstoff Milch wurde die Molkerei Drebber, ab 1976 die Molkerei Coppenbr\u00fcgge.<\/p>\n<p>Au\u00dfer Butter musste auch die gesamte Voll- und Magermilch zu erh\u00f6hten Preisen (Berlinpreis) abgenommen werden. Ende 1976 sprang ein Gro\u00dfabnehmer, der Alli-Frischdienst ab. 1977 schloss sich die Molkerei Hiddestorf dem Frischli Verbund an. Neben Milch wurden vor allem verschiedene Sorten Joghurts produziert. Die Probleme jedoch blieben und f\u00fchrten schlussendlich zur Schlie\u00dfung der Molkerei im Laufe des Jahres 1978.<\/p>\n<p>Die Geb\u00e4ude wurden verpachtet und\/oder verkauft. Die \"neue Molkerei\" wurde von einem Fertiggerichthersteller \u201eCALENBERGER LANDMARKT GMBH\u201c \u00fcbernommen. Sp\u00e4ter schloss auch dieser Betrieb. Die alte Molkerei wurde verkauft und zu Wohnungen umgebaut. Die Familie Binnewies verlegte ihren Wohnsitz nach Hannover. Der j\u00fcngste Sohn der Familie hat 1978\u00a0 in Israel als Molkerei-Ingenieur angefangen, geheiratet und lebt seitdem dort. Die Stadt Hemmingen wandelte das Gewerbegebiet, auf dem die \u201eneue Molkerei\u201c stand, in ein bebauungsf\u00e4higes Wohngebiet um. Weltkriegs wurde die Molkerei in Richtung Ohlendorf erweitert, was man an den zus\u00e4tzlichen Fenstern und dem zweiten Eingang erkennen kann.<\/p>\n<p>Die 2. Erweiterung in Richtung der Dorfmitte erfolgte Mitte der f\u00fcnfziger Jahre und endete 1957 mit der neuen Haust\u00fcr (ganz links), dem Bau der Leerguthalle (Richtung Hof) und dem Wohnungsausbau f\u00fcr Frau Binnewies. Mit der Fertigstellung wurde das alte Geb\u00e4ude zum Verpackungslager - die neue Produktionsst\u00e4tte wurde im Herbst 1964 bezogen. Maschinen aus Jeinsen sowie aus dem Altbau fanden eine neue Heimat. Durch den Neubau wurde die Produktpalette um Joghurt und Dessertprodukte erweitert.
